Citrus Marinated Shrimp Skewers

1 lb Cox’s Shrimp peeled and deveined
2 large garlic cloves, thinly sliced
1/3 cup olive oil
3 tbsp packed dark brown sugar
2 tbsp Balsamic vinegar
1 ½ tsp Dijon mustard
¼ cup lemon juice
¼ cup orange juice
Freshly grated lemon zest

Preparing the Marinade

Heat olive oil in small pan over medium-low heat. Add garlic and sauté until golden. Remove pan and discard garlic slices. Add remaining ingredients to oil and salt and paper to taste. Set aside to cool. Makes 1 cup (enough for 1 to 2 pounds of shrimp).


1. Thread shrimp on metal or wooden skewers (soak wood skewers for about 30 minutes). Place skewers in glass dish.
2. Pour half of the marinade over the shrimp. Reserve remaining marinade for basting.
3. Marinate at room temperature for 15 minutes. Drain shrimp, discard used marinade.
4. Preheat grill to medium. Grill shrimp for 10 to 12 minutes or until pink, turning once and basting with reserved marinade the last few minutes of grilling.
