Baja Shrimp Tacos
These quick and easy tacos can be made using Cox Brand Peeled and Deveined Key West Pink Shrimp cooked your favorite way. Grill, saute, broil or pan fry, the choice is yours!
Ingredients
- 12 ounces frozen Cox Shrimp Co peeled and deveined shrimp
- Flour tortillas, for serving or you may use corn tortillas if preferred
- Chopped green onions for serving
For the Baja Sauce:
- 1/4 cup mayonnaise
- 1/4 cup sour cream or Greek yogurt
- 1/4 cup sweet chili sauce
- 1 tablespoon rice wine vinegar
- 1 tablespoon lime juice (or more to taste)
- 1 tablespoon sriracha or hot sauce (optional)
For the Slaw Filling:
- 4 cups fresh coleslaw mix
- 1/4 cup chopped fresh cilantro (optional)
- 1/2 cup thinly sliced red onion
- 2 to 3 tablespoons lime juice
- Salt and pepper, to taste
Directions
Cook shrimp of your choice according to package directions. Meanwhile, prepare the baja sauce by whisking together mayonnaise, sour cream OR Greek yogurt, sweet chili sauce, rice wine vinegar, lime juice and sriracha or hot sauce (optional) in a small bowl. Season with salt and pepper, to taste.
In a medium bowl, toss together the coleslaw mix, cilantro (optional), red onion and lime juice. Season with salt and pepper to taste.
Place the cooked shrimp in a large bowl and toss with desired amount of sauce. Serve in warm tortillas topped with coleslaw mixture, chopped green onions, and a drizzle of additional sauce, if desired.
